How often are copies made?
The frequency is set by how much work the company can afford to lose. A daily copy is usual, and more often for what is critical.
How long are copies kept?
The period is agreed in the proposal according to the type of information and the company's obligations.
Does it help against an attack that encrypts files?
Yes, as long as there is a copy from before the attack and out of reach of the affected accounts. That is why it is kept separately and with versions.
